Salmon Cakes

I make these all the time, it's a process, but well worth it! Try these yummy salmon cakes for dinner tonight! xoxo Chelsea
Ingredients
1/2 pound fresh salmon
Good olive oil
Kosher salt and freshly ground black pepper
4 tablespoons unsalted butter
3/4 cup small-diced red onion (1 small onion)
1 1/2 cups small-diced celery (4 stalks)
1/2 cup small-diced red bell pepper (1 small pepper)
1/2 cup small-diced yellow bell pepper (1 small pepper)
1/4 cup minced fresh flat-leaf parsley
1 tablespoon capers, drained
1/4 teaspoon hot sauce (recommended: Tabasco)
1/2 teaspoon Worcestershire sauce
1 1/2 teaspoons crab boil seasoning (recommended: Old Bay)
3 slices stale bread, crusts removed
1/2 cup good mayonnaise
2 teaspoons Dijon mustard
2 extra-large eggs, lightly beaten
Directions
Preheat the oven to 350 degrees F.
Place the salmon on a sheet pan, skin side down. Brush with olive oil and sprinkle with salt and pepper. Roast for 15 to 20 minutes, until just cooked. Remove from the oven and cover tightly with aluminum foil. Allow to rest for 10 minutes and refrigerate until cold.
Meanwhile, place 2 tablespoons of the butter, 2 tablespoons olive oil, the onion, celery, red and yellow bell peppers, parsley, capers, hot sauce, Worcestershire sauce, crab boil seasoning, 1/2 teaspoon salt, and 1/2 teaspoon pepper in a large saute pan over medium-low heat and cook until the vegetables are soft, approximately 15 to 20 minutes. Cool to room temperature.
Break the bread slices in pieces and process the bread in a food processor fitted with a steel blade. You should have about 1 cup of bread crumbs. Place the bread crumbs on a sheet pan and toast in the oven for 5 minutes until lightly browned, tossing occasionally.
Flake the chilled salmon into a large bowl. Add the bread crumbs, mayonnaise, mustard, and eggs. Add the vegetable mixture and mix well. Cover and chill in the refrigerator for 30 minutes. Shape into 10 (2 1/2 to 3-ounce) cakes.
Heat the remaining 2 tablespoons butter and 2 tablespoons olive oil in a large saute pan over medium heat. In batches, add the salmon cakes and fry for 3 to 4 minutes on each side, until browned. Drain on paper towels; keep them warm in a preheated 250 degree F oven and serve hot.

Plum Statement Lip

Fall is here and time to welcome in rich, deep colors. One of my favorite ways to use color is the plum statement lip, it's a great addition to any fall look. How to do this look:
- Line lip with plum lipliner, and use a plum lipstick to blend in. Apply clear gloss for a finishing touch.
- For a softer look use plum colored lip gloss. Start with gloss in the center and blend it out to the edges.

A perfect manicure is a must to complete your look. Your nails should get as much attention, if not more than your hair and makeup. After all, when you are out and about sporting some arm candy, with that gorgeous new ring that you finally gave in and bought, people are not only noticing your fabulous jewelry, but also your nails! This Fall is all about keeping it warm (I mean living in California we have to take every opportunity to show off our Winter looks-what better way to do so than with our nails?). Therefore stay away from your typical French Manicure this Fall (I know this might be hard for some of you, but trust me!), and go for a deep red, creamy purple or navy. Even a dark neutral would look fabulous. There is nothing more luxurious than wearing an all cream/white outfit and having your nails stand out with a rich warm color. Your nails will be as chic and classy as ever!

When I am not thinking about the latest outfit I want to buy, or the dream bag that I MUST have, I am usually thinking about something equally as important-food. No matter what time of day it is, I can always eat. Lately, I have been getting bored with my "on-the-go snacks". That is when I discovered about my good friends family business, Perfect Foods Bars. Let me tell you, they are truly perfect AND delicious. They come in flavors such as: Peanut Butter, Almond Butter, Cranberry Crunch (my favorite), and more! Also, what is awesome about them is that they are GOOD for you. They are a great source of fiber, gluten free, no refined sugar, and they are all handmade! You keep them in the fridge, that is how fresh they are-no artificial ingredients or chemical preservatives (ew). I can go on and on about these babies, but one must try them to fully understand how amazing they are. They are perfect for people like me, who are constantly on the go. They keep me full and happy- what more can a girl ask for?! Except maybe a new Chanel bag...

White is the new Black
Just because the cold weather is approaching, does not mean that we are only left to pick from a range of different black dresses. White is the new black for Fall and Winter, and I'm thrilled! There is nothing I love more that a clean crisp white outfit...It just looks so chic!!! A white dress can be perfectly paired with any color accessory and some killer black stilettos. Or make a bold statement with some colorful heels like hot pink or red! Also, an awesome trend to look forward to is layering whites and beiges. Just like this look, I love how Derek Lam took the feminity of a white flowy skirt, and created some texture by adding a chunky sleveless knit sweater. It may not snow here in sunny California, but with this trend it will definetely create a winter feel atmosphere!
